Alfalfa

Type: Perennial

Parts: leaves, flowers, seeds

For: This herb is commonly found in hay fields although it occasionally strays into gardens or yards. It is preferred by farmers for the high nutrition and increased milk production it provides animals (or people). It is high in beta carotene, vitamins C, K, & E and calcium. Contains all known vitamins and minerals. A rich source of B-12 for vegetarians. One of the highest chlorophyll bearing plants known to man. Because the roots of alfalfa go very deep, it is capable of obtaining and assimilating minerals that are unreachable to other plants. The dried and powdered leaves and flower heads are highly nutritious and can be added to soups, stews, or other dishes or made into tea. Alfalfa seeds is the most common seed for sprouting. Some people report reduce hayfever allergy symptoms after regular usage.
